Do foods with higher sugar content negatively impact the bokashi ferment?

No, there is no evidence that food with higher sugar content would influence the fermentation process.

Higher sugar content in organic waste kept in the Bokashi Organko hasn't been shown to have an influence on the fermentation process. However, we advise you to use all sorts of organic waste in the bin, from vegetable and fruit scraps, coffee grounds to uncooked food and citrus peels. This makes the bokashi composting method so appealing as there are fewer limitations than traditional composting. At the same time, a wide variety of food waste will result in a fermented organic matter richer in nutrients and more beneficial to the soil.
