The recommended time frame for filling up your bokashi bucket is 2 weeks. As long as the process goes uninterrupted (i.e. you have ensured the right temperature, anaerobic conditions and a sufficient amount of bran), extending this time limit does not apose a problem in most cases. Some users report collecting waste for months at a time without issue (during the cold season). The crucial part is allowing the mass a minimum of 2 weeks to ferment.
